Memorial Day Dessert: Strawberry S'mores Skewers
File this recipe under easy, fun, summertime, kid-cooking, and surprisingly delicious gooey goodness. We test drove the Strawberry S'mores Skewers (say that 5x fast) with friends for my most recent birthday weekend. A hit and oh so yummy served with a 2012 Teac Mor Pinot Noir. The recipe will keep on repeat this summer, starting with grilling it up for Memorial Day.
Stack the ingredients on a skewer beginning and ending with a strawberry half. Set aside. When all skewers are assembled, brush a neutral oil onto the grills of a gas or charcoal grill. Heat grill to medium. Place skewers on the heated grill and keep an eye on them. Turn after 3-5 minutes or when you can see the marshmallows are becoming toasted. Rotate and toast the other side of the skewers for an additional 2-3 minutes. Remove from grill and serve immediately.
Serves 10 (1 skewer per person)
- 10 bamboo grilling skewers (soaked in water for 10 minutes before assembly to prevent burning)
- 20 store-bought brownie bites (we love Trader Joe's Sea Salt Brownie Petites)
- 20 marshmallows
- 10 strawberries, washed, hulled and halved
